Coat a sauté pan with a drizzle of canola oil and heat over medium heat. Add in the onions and garlic and cook until softened and translucent, about 5-7 minutes. Remove from the heat and let cool slightly. Preheat the oven to 350 degrees. In a large mixing bowl, combine the onion and garlic, ground beef and 3 Tbsp Grillville spice. Mix well to combine. Portion the cheese into 12 equal-sized cubes, about ½-inch each. Divide the beef mixture into 12 portions. Flatten each portion of beef and wrap firmly around each block of cheese, making sure to enclose the cheese entirely. Gently flatten each burger to about 2-inches thick and place on a parchment-lined baking sheet. Season on both sides with a pinch of kosher salt and a few grinds of black pepper. Bake for 20 minutes, flipping once halfway through, until the meat is cooked through to desired doneness. Alternatively, grill your burgers over medium-high heat for about 4-6 minutes per side. Remove to a baking sheet and tent with foil. Meanwhile, whisk together the mayonnaise, ketchup, mustard and remaining 1 tsp Grillville spice. Coat both sides of your buns with Grillville-spiced special sauce. Top with a cheesy burger patty and desired toppings. Serve warm, with extra napkins!
