- canola oil
- 1 small yellow onion, diced
- 4 gloves garlic, minced
- kosher salt and freshly-ground black pepper
- 2 lb. premium ground beef (80% fat, 20% lean)
- 3 tbsp + 1 tsp This Little Goat Went to Grillville, divided
- 1 6-ounce block sharp cheddar cheese
- 1/2 cup mayonnaise
- 1 tbsp ketchup
- 1 tbsp yellow mustard
- 12 slider buns or sweet Hawaiian rolls
- lettuce, tomato, red onion and/or pickle chips, for topping

- Coat a sauté pan with a drizzle of canola oil and heat over medium heat. Add in the onions and garlic and cook until softened and translucent, about 5-7 minutes. Remove from the heat and let cool slightly.
- Preheat the oven to 350 degrees.
- In a large mixing bowl, combine the onion and garlic, ground beef and 3 Tablespoons Grillville spice. Mix well to combine.
- Portion the cheese into 12 equal-sized cubes, about ½-inch each.
- Divide the beef mixture into 12 portions. Flatten each portion of beef and wrap firmly around each block of cheese, making sure to enclose the cheese entirely.
- Gently flatten each burger to about 2-inches thick and place on a parchment-lined baking sheet. Season on both sides with a pinch of kosher salt and a few grinds of black pepper. Bake for 20 minutes, flipping once halfway through, until the meat is cooked through to desired doneness. Alternatively, grill your burgers over medium-high heat for about 4-6 minutes per side. Remove to a baking sheet and tent with foil.
- Meanwhile, whisk together the mayonnaise, ketchup, mustard and remaining 1 teaspoon Grillville spice.
- Coat both sides of your buns with Grillville-spiced special sauce. Top with a cheesy burger patty and desired toppings. Serve warm, with extra napkins!
