Yucatan Spiced Feta Zucchini Sammie

Ingredients

  • 2 pieces of naan or preferred flatbread

  • ½ cup feta, crumbled and divided
  • ½ red onion, thinly sliced
  • ½ cup mayo
  • 4 tbsp This Little Goat went to Yucatán, divided
  • 2 yellow squash, thinly sliced

  • 2 zucchinis, thinly sliced
  • ½ tbsp salt
  • 1 tbsp oil

Directions

  1. Combine mayo and 2 tbsp This Little Goat went to Yucatán sauce and set aside.
  2. Drizzle oil and salt over sliced yellow squash and zucchini.
  3. Grill the seasoned veggies at 400 F and brush on 2 tbsp of This Little Goat went to Yucatán Sauce before taking off the grill and setting aside.
  4. Place the naan on the grill until the bread is nicely warmed through.
  5. Smother one side of the naan with This Little Goat went to Yucatán mayo. On one half of the bread layer cooked veggies, crumbled feta, and sliced red onions and fold over to make a tasty sandwich.
