Yucatán Kale and Fennel Salad


  • 1/4 cup This Little Goat went to Yucatán 
  • 2 bunches of kale
  • 1 large honey crisp apple, thinly sliced
  • 1 bulb fennel, thinly sliced
  • 1/2 cup fresh feta cheese
  • 1 lime
  • 1/2 cup olive oil


  1. In a small bowl, mix together Yucatán sauce, olive oil, and lime juice to make the Yucatán Dressing.
  2. Clean kale and cut into 1 inch pieces.
  3. Toss with Yucatán dressing and top with apples, fennel, and feta cheese.
