- 1/4 cup This Little Goat went to Yucatán
- 2 bunches of kale
- 1 large honey crisp apple, thinly sliced
- 1 bulb fennel, thinly sliced
- 1/2 cup fresh feta cheese
- 1 lime
- 1/2 cup olive oil
- In a small bowl, mix together Yucatán sauce, olive oil, and lime juice to make the Yucatán Dressing.
- Clean kale and cut into 1 inch pieces.
- Toss with Yucatán dressing and top with apples, fennel, and feta cheese.
