- 5 tbsp This Little Goat Tropical Crunch
- 1/2 cup Greek yogurt
- 2 cups feta cheese
- 10 oz cherry tomatoes
- Fresh dill
Instructions
- Start by dry pan roasting the cherry tomatoes. Heat a pan over medium heat and add the cherry tomatoes. Allow them to cook, turning occasionally, until they start to blister and release their juices.
- Smash the roasted cherry tomatoes with the back of your spatula and add 3 tbsp of Tropical Crunch to the pan. Stir well to combine and allow the mixture to simmer and reduce for a few minutes. Set aside and let it cool.
- In a high-speed blender or food processor, combine the Greek yogurt, feta cheese, and 2 tbsp of Tropical Crunch oil. Blend or process until the ingredients are well combined and the mixture is smooth and creamy. Adjust the consistency by adding more oil if desired.
- Spread the whipped feta dip onto a plate, creating a smooth and even layer.
- Top the whipped dip with the crunch tomato topping, spreading it evenly across the surface. Garnish with fresh dill for added flavor and a pop of color.
Serve the Tropical Crunch Whipped Feta Dip with your favorite crackers, pita bread, or sliced vegetables.
