Ingredients
- ¼ cup This Little Goat went to Yucatán + more to taste
- 6 corn tortillas
- 1 cup black beans, smashed
- 1 cup oaxacan or mozzarella cheese, thinly shredded
- 6 eggs
- 1 large avocado, sliced
- 2 tomatoes, diced
- 2 tbsp neutral oil
Directions
- Preheat the oven to 400 F.
- Coat sheet pan with oil and lay out tortillas on top in a single layer. Brush the tops of tortillas with remaining oil and bake in oven for 8 minutes or until crunchy.
- Top baked tortillas with diced tomatoes, a drizzle of This Little Goat went to Yucatán Sauce and cheese.
- Once all tortillas are topped with cheese, tomatoes, and This Little Goat went to Yucatán Sauce, create a well in the center of each and crack a single egg into each and bake for 8 - 12 minutes or until the whites are fully cooked through.
- Top the fully cooked eggs with avocado This Little Goat went to Yucatán Sauce and enjoy!
