Crunch Cheesy Corn Casserole


  • 4 cups fresh corn kernels (cut off the cob)
  • 8 oz cream cheese
  • 1 cup half and half
  • 1 (8.5-oz) box cornbread mix
  • tbsp This Little Goat Tropical Crunch
  • 2 eggs


  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. In a medium bowl, combine the fresh corn kernels, cream cheese, half and half, cornbread mix, Tropical Crunch, and eggs. Stir the ingredients together until just combined, making sure not to over mix.
  3. Grease a 2-quart casserole dish to prevent sticking.
  4. Pour the batter into the greased casserole dish, spreading it out evenly.
  5. Bake the casserole in the preheated oven for 55-60 minutes or until the top turns golden brown and the casserole is fully cooked through.
  6. Once the Tropical Crunch Cheesy Corn Casserole is ready, remove it from the oven and let it cool slightly before serving.
