Yucatán chicken salad sandwiches with avocado mayo

ingredients

 

1 ripe avocado

1/2 cup Kewpie mayo (or regular mayo if unable to find Kewpie)

Kosher salt 

2 cups chopped cooked chicken 

This Little Goat went to Yucatán 

Fresh lettuce or kale leaves (optional)

8 slices sourdough bread, toasted 

 

instructions

Add the avocado flesh, ½ cup mayo and ½ teaspoon salt to the bowl of a food processor. Pulse until smooth and creamy. Season to taste with salt and set aside.

Toss the chopped chicken with 2 tablespoons each mayo and Yucatán sauce. Season to taste with salt and additional Yucatán mayo, as desired.

Spread avocado mayo onto your sliced bread. Top with some leaves of crunchy kale (if desired) and a spoonful of Yucatán chicken salad. Sandwich together, slice and serve!
