Spiced Broccoli Slaw with Cranberries and Cheddar

1/3 cup mayonnaise

1 1/2 tsp This Little Goat went to India

2 Tbsp apple cider vinegar 

2 Tbsp fresh lemon juice

2 tsp honey 

Kosher salt 

1 head broccoli, chopped into florets (about 4 cups broccoli florets)

2 cups shredded Brussels sprouts

1 green apple, peeled and small dice

6 oz. sharp cheddar cheese, shredded (about 1 1/2 cups)

1/2 cup dried cranberries

1/3 cup pepitas (pumpkin seeds), toasted

1/3 cup sliced almonds, toasted 


In a small bowl, whisk together the mayonnaise, India spice, vinegar, lemon juice, honey and ½ tsp salt. Set aside.

Add broccoli to the bowl of a food processor and pulse until broken down with a few chunks remaining. Place in a large bowl along with shaved Brussels sprouts, apple, cheddar, cranberries, pepitas and almonds. Toss with dressing until well combined. Let sit in the refrigerator for at least 20 minutes, allowing the flavors to come together. Season to taste with salt and serve chilled.
