Morocco Spiced Roasted Beets & Party Nuts

prepare the beets

clean and dry beets

toss the beets in olive oil, approx 1 tbsp

add salt to taste

wrap the beets in foil and roast at 350° for about 90 minutes (time varies based on size of beets)

yogurt sauce

transfer 2 cups of greek yogurt into a mixing bowl

add 1 tsp of This Little Goat went to Morocco spice

squeeze in half of a lime

add salt to taste

and a drizzle of olive oil, approx 1 tsp

stir it all up and set aside

party nuts!

zest half of a lime

 

 squeeze in the other half of the lime

 

toss in a pan and toast until golden brown

 

plating

once beets are done roasting, peel and cut into bite sized piece

toss with a drizzle of olive oil, approx 1 tsp

 

a pinch of salt

 

and 1 tsp of This Little Goat went to Morocco spice

 

lay down a layer of yogurt sauce

 

add the beets

 

top with party nuts

 

garnish with mint
