Korea Glazed Sweet Potatoes


  • 2 pounds of sweet potatoes, peeled and large diced
  • ¼ cup of melted butter
  • ½ cup This Little Goat went to Korea
  • ¼ Brown sugar
  • Mint or herbs on hand to garnish


  1. Blanch sweet potatoes, letting the diced potatoes boil in salted water until cooked half way through (about 3-5 minutes)
  2. Mix melted butter with This Little Goat went to Korea and brown sugar
  3. Place butter mixture and blanched sweet potatoes in an oven safe dish and fold together
  4. Bake at 350 F for 30 minutes or until golden brown and cooked through - Enjoy!
