Ingredients
- 2 pounds of sweet potatoes, peeled and large diced
- ¼ cup of melted butter
- ½ cup This Little Goat went to Korea
- ¼ Brown sugar
- Mint or herbs on hand to garnish
Directions
- Blanch sweet potatoes, letting the diced potatoes boil in salted water until cooked half way through (about 3-5 minutes)
- Mix melted butter with This Little Goat went to Korea and brown sugar
- Place butter mixture and blanched sweet potatoes in an oven safe dish and fold together
- Bake at 350 F for 30 minutes or until golden brown and cooked through - Enjoy!
