- 1 medium ripe banana, plus more for topping
- 1 cup milk of choice
- 1/4 cup plain Greek yogurt
- 2 Tbsp pure maple syrup
- 1/2 tsp pure vanilla extract
- 1 cup old-fashioned rolled oats
- 1 Tbsp chia seeds
- 1/2 tsp This Little Goat went to India
- 1/4 tsp ground cinnamon
- 1/4 tsp kosher salt
- Nut butter and/or roasted nuts, for topping (optional)
preparation
- Place the banana in a mixing bowl and mash with a fork until broken down. Stir in the milk, yogurt, maple syrup and vanilla until combined. Add in the oats, chia seeds, India spice, cinnamon and salt. Mix until well combined.
- Transfer to a mason jar or other resealable storage container. Refrigerate for at least 5 hours, ideally overnight. If desired, top with sliced banana, nut butter and/or roasted nuts before serving.
