ingredients
1 medium ripe banana, plus more for topping
1 cup milk of choice
1/4 cup plain Greek yogurt
2 Tbsp pure maple syrup
1/2 tsp pure vanilla extract
1 cup old-fashioned rolled oats
1 Tbsp chia seeds
1/2 tsp This Little Goat went to India
1/4 tsp ground cinnamon
1/4 tsp kosher salt
Nut butter and/or roasted nuts, for topping (optional)
preparation
Place the banana in a mixing bowl and mash with a fork until broken down. Stir in the milk, yogurt, maple syrup and vanilla until combined. Add in the oats, chia seeds, India spice, cinnamon and salt. Mix until well combined.
Transfer to a mason jar or other resealable storage container. Refrigerate for at least 5 hours, ideally overnight. If desired, top with sliced banana, nut butter and/or roasted nuts before serving.
