India Jelly Donut Holes

Fill a deep skillet or large pot with canola oil, about 1-2 inches deep. Heat over medium-high heat until the oil reaches a temperature of 350 degrees.

While the oil is heating, prepare the batter: In a medium bowl, whisk together the flour, sugar, baking powder, 2 teaspoons India spice and salt.

In a separate bowl, whisk together the milk, butter, egg and vanilla. Stir the wet ingredients into the dry until just combined (a few lumps are okay!).

In a separate large bowl, combine the confectioners sugar and remaining 1 teaspoon India spice. Set aside.

Once the oil is heated, using a tablespoon measuring cup or 1-ounce ice cream scoop, drop spoonfuls of batter into the hot oil in batches, making sure now to overcrowd the oil. Cook, flipping halfway through, until golden brown on both sides, about 2 minutes per side.

Using a slotted spoon, transfer the donuts to a paper towel-lined plate to rain and repeat with remaining batter. Let cool slightly before filling.

Transfer the jam to a resealable Ziploc bag or pastry bag fitted with a long piping tip. Snip one bottom corner off of the bag and carefully pipe desired amount of jam into the center of each donut.

Dust warm donuts with India-spiced confectioners sugar. Serve warm or at room temperature.
