Grilled Hong Kong Ribs

2 - 3 lb. baby back ribs 

Kosher salt & freshly-ground black pepper

instructions

Preheat half of your grill over medium/medium-low heat and leave the other half un-lit.

Season the ribs on all sides with salt and pepper. Place the ribs, bone-side down, on the unheated portion of the grill. Close the lid and grill for 2 - 2 ½ hours, until the ribs are very tender and browned.

Brush all over the ribs with This Little Goat went to Hong Kong sauce until well coated. Increase the grill temperature to medium-high. Transfer the ribs, meat-y side down, to the hot side of the grill. Grill until charred and crispy, about 8-12 minutes more.

Remove to a serving plate, drizzle with more Hong Kong sauce and dig in!
