1 tsp This Little Goat went to India

1 Tbsp honey

3 Tbsp seasoned rice wine vinegar

3 Tbsp extra-virgin olive oil

Kosher salt

1 bunch curly kale, stems removed and roughly chopped, about 4-6 cups chopped kale

1 cup shredded cabbage

1 large carrot, shredded (about 1 cup)

1/4 cup dried cranberries

1/4 cup dried apricots, chopped

1/4 cup pine nuts, toasted

1/4 cup pepitas (pumpkin seeds), toasted

1/4 cup torn mint leaves


In a small bowl, whisk together India spice, honey, vinegar, olive oil and ½ tsp salt. 

Place kale in large bowl and drizzle with a couple tablespoons of dressing. Massage dressing into kale for 1-2 minutes until well coated and starting to wilt. Add remaining ingredients to the bowl and pour over remaining dressing. Toss until everything is combined and well coated. Season to taste with salt and serve immediately.
