Crunchy Ritz Cracker “Thin Mints”

- 1 sleeve Ritz crackers (about 35 crackers)

- 8 oz. semi-sweet chocolate, roughly chopped

- 1 tsp canola or coconut oil

- This Little Goat Peppermint everything crunch


Add the chopped chocolate and oil to a large, heatproof bowl. Place the bowl over a pot of simmering water, making sure the bowl does not touch the water. Melt the chocolate over the double boiler, stirring frequently, until completely melted and smooth.

Line a large baking sheet with parchment or wax paper.

Using a fork, dip the crackers in the warm, melted chocolate until completely coated in a thin layer, allowing any excess chocolate to drip off. Transfer to the lined baking sheet and sprinkle all over with This Little Goat Peppermint everything crunch. Repeat until all the chocolate and crackers have been used. Let cool completely at room temperature before serving.
