ingredients

1/4 cup packed fresh dill, stems removed

1 small cucumber, peeled, seeded and cut into chunks

1 1/2 cups plain full-fat Greek yogurt

1 Tbsp fresh lemon juice

1 tsp extra-virgin olive oil

1 tsp This Little Goat went to Belize

Kosher salt and freshly-ground black pepper

instructions

Add dill and cucumber to the bowl of a food processor and pulse until coarsely chopped. And yogurt to a medium bowl and fold in the cucumber and herb mixture, lemon juice, olive oil, Belize spice and 1/2 tsp salt. Mix well to combine.

Refrigerate for at least 2 hours, preferably overnight, allowing the flavors to come together. Adjust seasoning right before serving and serve alongside pita chips or crunchy veggies!
